rockets are banned but not on my cupcakes....

Fireworks night tomorrow night and I am off out to have a few snacks and let off some fireworks, I had planned to have a bigger soiree at home but the idea kinda fell through.

Am thinking of two styles of cupcakes I will make for tomorrow, defintely will make another batch of the lemon ones from Sunday as they were so good (and have cream cheese left)! I am going to attempt some lemon flavored icing for them and hopefully decorate them with firework-esque yellow stars and silver balls!  The second will be chocolate, with plain chocolate icing... I am going to ice them flat and then try and do some firework designs on the top with an icing bag and decorations etc etc

I also decided to make some of the snacks myself! And being the serial organiser I am I pre made some mini samoas last night and put them in the freezer, they were pretty easy actually, just sauteed onion in some spices like cumin, chilli powder, curry powder etc etc and then added some water and carrots, kumara and potato... simmered it down and then put it in little puff pastry circles and closed them up....

Hopefully they taste good too....

Im gonna try making some focacia bread too tonight when I do my cupcakes, well if I can be bothered
