This weekend we had amazing weather and it was defintely ... or hopefully a sign of the impending summer... so what better way to help it get a move along? PAVLOVAS! These mean kiwi summer to me and I loooooove them.... especially covered in cream and strawberries... and sometimes if im feeling kinky... some kiwifruit!
So I made some lemon and cream cheese cupcakes which I have to say were the nicest cupcakes I have EVER tasted, I got the recipe from a women's weekly cook / bake book and they were sooo yum, I never knew that lemon rind could be so strong, the recipe called for 2 teaspoons (which I thought was nothing!) and they tasted so lemony!
The meringues were a different story, I copied a recipe from the womens weekly again and it had all sorts of witchery involved haha there was white vinegar, cornflour etc etc As I had never made meringues before I just went along with it....... They failed miserably, when I was trying to cool them they sank into flat messes and were a weird color.... so off to youtube i went to for take 2

all she used was sugar and egg whites (suits me!) and made a BIG point about slow baking at a LOW heat..... the women's weekly recipe had them at 100 degrees for 45 minutes?!?!? Anyway so I baked them for about an hour and a half and they came out perfect...... although not as white as I would like... not sure how to achieve this?
One thing I learnt is that they grow quite a bit in the oven and therefore I made them a bit big, next time I will put less on the tray and hopefully they will come out around the size of the top of a cupcake.
Once everything was cool I cut the tops off the cupcakes and removed them from their papers, put a tiny bit of cream on top to hold the pav in place, put the pav on and topped it with cream and strawberries!
